One of our favorite family recipes is this easy fish stew. Less than 30 minutes from start to finish, absolutely delicious!

What is the secret recipe?

Olive oil!

Six tablespoons of olive oil may seem like a lot, but it adds a rich and wonderful flavor to the stew. That’s why we recommend that you use hearty fish that is not greasy. You can reduce the amount of olive oil if you want. However, we recommend that you use at least one tablespoon to cook to your taste.

Preparing and storing fish stew

If you’re making this stew for a dinner party, prepare the soup base ahead of time and let it cool. Then reheat the broth and add the fish just before serving.

Do you have any leftovers? Store in an airtight container in the refrigerator for up to 3 to 4 days. Just make sure to cool the soup to room temperature first.

We do not recommend freezing leftover soup as this will alter the texture of the fish. But it’s perfectly fine to freeze the broth and add the fish before serving.

Ingredients

Note: For a variation, add 1/2 pound shrimp, mussels, clams, and/or scallops to the stew. If adding shellfish, add a few minutes before the fish; they need more time to cook and open.

If you have shellfish broth, you can substitute 1 cup for the clam juice.

6 tablespoons extra virgin olive oil

1 medium onion, chopped (about 1 1/2 cups)

3 garlic cloves, chopped

2/3 cup fresh parsley leaves, chopped

1 1/2 cups fresh chopped tomatoes or 1 can (14 ounces) whole or mashed tomatoes and juice

2 teaspoons tomato paste, optional

1 bottle (8 ounces) clam juice (or 1 cup shellfish broth)

1/2 cup dry white wine (such as Sauvignon Blanc)

1 1/2 pounds firm white fish fillets, such as halibut, cod, red snapper, or sea bass, cut into 2-inch pieces

A pinch of dried oregano

Puree dried thyme

1/8 teaspoon Tabasco sauce or more to taste

1/8 teaspoon freshly ground black pepper, plus more to taste

1 teaspoon salt, plus more to taste

Method

Saute in olive oil: Heat olive oil in a large, thick saucepan over medium-high heat. Add onion and saute for 4 minutes. Add the garlic and cook for another minute. Add parsley and stir for 2 minutes. Add tomatoes and tomato paste and simmer for another 10 minutes.

To finish the soup: Add clam juice, dry white wine and fish. Simmer until the fish is cooked through and spread, about 3 to 5 minutes. Add spices – salt, pepper, oregano, thyme and Tabasco. Add more salt and pepper to taste.

Serve the stew: Scoop into individual bowls and serve.

Served on crusty bread and dipped in simmered fish broth, it was great.
