Ingredients
½ lb chicken fillets – halve thick fillets lengthwise
white or whole wheat bread
crumbled feta
5 Minute Tzatziki Sauce
green leafy lettuce
Marinade
½ cup olive oil
lemon juice
1 teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon crushed red pepper flakes
1 tablespoon minced garlic
½ teaspoon garlic powder
1 tablespoon herbs de Provence – or Italian seasoning (see note)
Cucumber Salad
½ cucumber – sliced or chopped, see note
½ cup cherry tomatoes – halved
¼ red onion – thinly sliced
1 tablespoon freshly squeezed lemon juice
salt and pepper to taste
Sprinkle with fresh dill – optional
Instructions
step 1
In a blender, add Greek yogurt, cucumber, dill, 2 cloves of garlic, white vinegar, 1 teaspoon lemon juice, 1 tablespoon olive oil, salt, and black pepper. Blend until smooth; set aside.
Step 2
In a large glass or ceramic bowl, whisk together 4 garlic cloves, juice of 1 lemon, red wine vinegar, 2 tablespoons olive oil, and oregano. Season with salt and black pepper.
Step 3
Add the chicken strips and stir to combine. Cover the bowl with plastic wrap and place in the refrigerator to marinate for 1 hour.
Step 4
Preheat oven grill and position grill about 6 inches from heat source.
Step 5
Remove chicken from marinade and shake off excess. Discard remaining marinade. Place chicken on a large baking sheet.
Step 6
Roast chicken in preheated oven until light brown in the center and no longer pink, 2 to 4 minutes per side.
Step 7
Place cooked chicken on a plate and let rest for 5 minutes.
Step 8
Heat 1 teaspoon olive oil in a large skillet over medium-high heat; place each flatbread in the skillet until warm and tender, about 2 minutes per flatbread.
Step 9
Serve warm bread with chicken strips, yogurt sauce, tomatoes, onions, and lettuce.

Notes:
Use fresh herbs: You can also use fresh herbs in place of dried herbs. Substitute 1 tsp chopped fresh thyme, oregano, and parsley for the Herbs Provence/Italian seasoning.
Cucumbers: You can use regular cucumbers, but since my homemade tzatziki dressing uses half English cucumbers, I only use half English cucumbers in my cucumber salad here!
Add bell peppers: Sometimes I add sautéed bell pepper flakes and it tastes great. So if you have chili on hand, I highly recommend you try this.
