If you want to eat with cake.  This Creamy Tarragon Chicken recipe combines the classic pairing of tarragon and chicken—you guessed it—no French kitchen without cream and white wine, and it’s a must-have for this recipe too.

Tarragon Sauce

The tarragon sauce contains dry white wine to deglaze the pan and finishes with a creamy finish.

Fresh tarragon is also essential to this dish because of its characteristic fennel flavor, but dried tarragon can also be used in a pinch.

My recipe below includes cornflour to thicken the sauce slightly, but you can omit this if you prefer a thinner sauce.

Ingredients

500 g new potatoes, halved
4 skinless chicken breasts
1 tablespoon sunflower oil
1 large onion, chopped
2 cloves garlic, crushed
350ml chicken stock
small bunch tarragon
175 g asparagus, washed
3 tablespoons low-fat whipped cream

How to Make Creamy Tarragon Chicken

Step 1

Start by browning the chicken breasts in a large skillet or skillet. You want the chicken to have great color and caramel on every side, and the best way to achieve this is to grill the chicken for at least 2 to 3 minutes per side until the color is nice.

Transfer chicken to a plate. The chicken does not need to be fully cooked at this point.

Step 2

Sauté shallots (or onions) and garlic for about 1 minute or until fragrant and soft.

Step 3

Add the white wine to the pot and soak until slightly reduced, about 1 to 2 minutes
Next, add the chicken stock, cream, and tarragon, toss to combine, scraping up any caramel bits from the pan with a wooden spoon. Simmer for a few minutes, then taste.

If desired, add enough cornmeal to the sauce to thicken slightly.

Step 4

Then return the chicken breasts to the sauce, cover and simmer for 5 to 10 minutes, or until the chicken is tender. Garnish with parsley or more chopped tarragon before serving.

What to Serve with Creamy Tarragon Chicken
