If you want to eat with cake. This Creamy Tarragon Chicken recipe combines the classic pairing of tarragon and chicken—you guessed it—no French kitchen without cream and white wine, and it’s a must-have for this recipe too.
The tarragon sauce contains dry white wine to deglaze the pan and finishes with a creamy finish.
Fresh tarragon is also essential to this dish because of its characteristic fennel flavor, but dried tarragon can also be used in a pinch.
My recipe below includes cornflour to thicken the sauce slightly, but you can omit this if you prefer a thinner sauce.
500 g new potatoes, halved
4 skinless chicken breasts
1 tablespoon sunflower oil
1 large onion, chopped
2 cloves garlic, crushed
350ml chicken stock
small bunch tarragon
175 g asparagus, washed
3 tablespoons low-fat whipped cream
How to Make Creamy Tarragon Chicken
Start by browning the chicken breasts in a large skillet or skillet. You want the chicken to have great color and caramel on every side, and the best way to achieve this is to grill the chicken for at least 2 to 3 minutes per side until the color is nice.
Transfer chicken to a plate. The chicken does not need to be fully cooked at this point.
